Mare e Monti means something like sea and mountains. So the spaghetti Mare e Monti are prepared with something from the sea and from the mountains. My pasta has shrimp and mushrooms. There is also a light sauce made from white wine and cocktail tomatoes, which give the dish a pleasant acidity. The pasta water in the spaghetti binds the sauce. This pasta will make you feel like you’re on holiday in Italy. And that in just 25 minutes. 🙂

Delicious pasta with shrimp and mushrooms


  • 250 g spaghetti
  • 300 g prawns, e.g. frozen
  • 250 g mushrooms
  • 1 onion
  • 1 clove garlic
  • 30 ml (1 fl.oz) white wine
  • 1 stalk parsley
  • 10 cocktail tomatoes
  • 2 tbsp olive oil
  • salt, pepper, for seasoning
  • 1 tbsp butter
  • 1 splash lemon juice
  • 1 piece parmesan


  • Defrost shrimp and devein if necessary. Clean and slice mushrooms. Wash and quarter the cocktail tomatoes. Peel onions and garlic and cut into small cubes. Chop the parsley. Put something aside for the topping.

  • Boil water in a large saucepan and salt the water. Cook spaghetti according to package instructions until al dente.

  • Heat olive oil in a pan. Sauté onions and garlic in it until translucent. Add parsley.

  • Deglaze with white wine and allow the white wine to evaporate completely.

  • Add mushrooms and sauté. Add the shrimp and sauté for about 1 – 2 minutes on each side, depending on their size.

  • Add tomatoes, some pasta water and spaghetti and mix well.

  • Season with salt, pepper and a little lemon juice. Stir in a knob of butter.

  • Grate parmesan. Arrange the spaghetti in a deep plate and sprinkle with parmesan. Serve with a leaf of parsley.


You can also add some crushed tomatoes from the can, then you get more of a tomato sauce. In the recipe, the pasta is very natural and left to the taste of mushrooms and prawns.
