Often pumpkin is prepared only as a soup. However, it is an absolute all-rounder, whether as a vegetable side dish or pureed as a potato substitute. In this recipe, however, he is the main player. Filled with a minced meat and feta mixture, it comes out extremely flavorful and delicious. Not much chichi, but extremely “schmackofatz”, as they say. A very tasty stuffed squash filled with a ground meat and feta mixture.
Ingredients
- 1 Hokkaido pumpkin, approx. 1 - 1,5 kg
- 1 clove garlic
- 1 onion
- 300 g minced meat, mixed or ground beef
- 1 rod leek
- 1 tbsp tomato puree
- 2 - 3 tbsp crème fraîche
- 50 ml 1,7 fl.oz. cream
- 200 g feta
- 4 tbsp sunflower oil
- salt and pepper , for seasoning
- 1 tsp paprika powder, sweet
- 1 tsp rosemary
Instructions
Preheat oven to 150 °C (302° F) (convection oven). (top/bottom heat: 170 °C/ 340° F)
Wash the pumpkin thoroughly. Cut off the top and remove the seeds from the pumpkin with a spoon. Scrape out some of the pumpkin flesh with a spoon until the wall is about 1.5 to 2 cm thick (finger width). Dice pumpkin flesh into small cubes and set aside.Lightly rub the inside of the pumpkin with salt. Put the lid on the pumpkin, place in a baking dish and pre-cook in the oven on the bottom rack for 10 – 15 minutes.
Wash the leek and cut into thin rings. Peel onions and garlic and cut into small cubes.
Heat oil in a pan and sauté onions and garlic until translucent.
Add minced meat and pumpkin and fry until hot.
Add leek and fry briefly.Stir in tomato puree, crème fraîche and cream over low heat. Season the mixture with salt, pepper, rosemary and paprika powder.
Crumble feta into small pieces. Remove pre-cooked squash from oven and fill alternately with ground meat mixture and crumbled feta. The last layer should be feta. Put the lid back on.
Bake in the oven for another 25 – 30 minutes.
Allow the squash to cool slightly before serving.
